How to: Vegan Mexican Tofu Scramble

As an addition to Healthy Eating: The VB6 Diet I wanted to share with you how to make one of my favorite vegan meals. The best part about this meal is that it can be made for breakfast, lunch or dinner! Vegan Scramble

  • 1 package extra firm tofu
  • 1 Tbs olive oil
  • 1 can black beans
  • ½ can of corn
  • ½ onion diced
  • 1 clove garlic
  • 1 medium tomato diced
  • 1 avocado sliced
  • salt and pepper to taste
  1. Drain and cube the tofuIMG_7966
  2. Heat 1 TBS olive oil in a medium frying pan
  3. Add garlic, onion and tofu and cook until the onion is translucent, stirring every now and thenTofuinPan
  4. Add salt and pepper
  5. Drain the black beans and corn
  6. Add black beans and corn to pantofuandbeans
  7. Stir and cook for another 3-4 minutes until black beans and corn are heated
  8. Spoon the mixture into two bowls or onto two tortillas and top with tomatoes and avocadosrecipeIMG_7981
