Last Friday, we had friends over for dinner who we hadn't seen in a long time. Not only did it make me happy to see them and spend time with them, but I love planning and hosting dinner parties. Especially themed dinner parties. Our theme last week was a Vegan Mexican Fiesta. We made marinated tofu, beans and corn filled arepas with Spanish rice and vegan sour cream (a mixture involving lots of cashews). Rob even bought a vegan churro as part of dessert! The featured cocktail was a La Paloma (tequila, grapefruit and lime), a new favorite of mine and the sounds of the Gipsy Kings and The Buena Vista Social Club serenaded us as we chatted, ate, and laughed the night away.
